Latent Heat

When you eat ice cream heat is removed from your mouth. The amount of heat removed depends on the heat energy required to raise the mouthful of ice cream from -20°C tobody temperature.

If we have two ice creams one with a higher ice content than the other (both starting at the same temperature) then the one which contains more ice will feel colder as it takes more heat energy from the mouth. More heat energy is taken as it has more hydrogen bonds to break in order to melt all the ice.

This is its latent heat.
