Five-Spice Chicken
  • Powdered "five spices" (available in the oriental foods section of your grocery store) 
  • 1/2 cup orange marmalade 
  • 2 cloves of garlic, crushed 
  • 1/4 cup pale dry sherry 
  • 2 Tblsp. molasses 
  • Pepper to taste 
  • 1 frying chicken, cut up 
Sprinkle the chicken liberally with the five-spice powder. Mix the remaining ingredients together and marinate the chicken for
24 hours, or at least overnight, in this mixture. 
Drain the marinade and reserve. Microwave the chicken for ten minutes at highest power setting. Drain the juices, turn the chicken, and cook on "high" for five minutes longer. Heat the marinade and juices separately.
Or, you may cook the chicken in a conventional oven at 350 degrees for 60-75 minutes, basting occasionally.
